Donuts are my 2nd favorite food (after Mac and Cheese of course) and a few months ago, I got a donut pan for my birthday, which I was finally able to put to use this morning. With the snow day and all, it was the perfect opportunity to try it out! This is a super simple recipe with ingredients that you will probably have laying around. If you do not have a donut pan, you can use a mini muffin tin to make donut holes. Make sure to mix the batter well in order to ensure that there are no lumps however, be careful not to over mix. When putting the batter into the donut pan, I used a plastic bag and piped the batter but if you can also spoon it in. Plus, since they are baked and not fried, they are basically considered a health food!
The frosting was definitely the best part of these! It is basically a chocolate ganache and takes less than a minute to make! Since you will also probably have leftover ganache, it can be stored in the refrigerator and can be used as an ice cream topping, yum!

To Make the Glaze:
This makes about 8 donuts and they can be kept for up to two days at room temperature but they taste the best if eaten the same day! :)
Donut Batter
- 1 Cup Flour
- 1 Teaspoon Baking Powder
- 1/4 Teaspoon Baking Soda
- 1/4 Teaspoon Nutmeg (Gives them a bakery style taste)
- 1 Egg
- 1/3 Cup Brown Sugar
- 1/4 Cup Milk
- 1/4 Cup Sour Cream (or Plain Greek Yogurt)
- 2 Tablespoons butter (melted and then cooled)
- 1 1/2 Teaspoons vanilla
Chocolate Ganache
- 1/2 Cup Semisweet Chocolate Chips
- 2 Tablespoons Butter
- 2 Teaspoons Corn Syrup
- 2 Teaspoons Water
Directions:
- Preheat the oven to 350 degrees and grease the donut pan.
- Whisk together the flour, baking powder, baking soda and nutmeg.
- In another bowl, mix together the egg, brown sugar, milk and yogurt until it is completely smooth. Add the melted butter and vanilla. When adding the butter, make sure it has cooled to a point where it will not seize when added to the cold ingredients.
- Add the wet ingredients to the dry ingredients and stir until combined. Don't worry, batter will be thick.
- Spoon or pipe the batter into the donut pans, filling until they are 3/4 of the way full.
- Bake for 9-10 minutes or just until they are a light brown. Let them cool before glazing.
To Make the Glaze:
- Place all the ingredients in a microwave safe bowl and melt in 20 second increments, stirring after each time.
- Once it is completely smooth, dip the top of the donuts into the glaze.
