These cupcakes are a twist on a classic chocolate cupcake. The cookies and cream makes them a bit fancier and is definitely a crowd pleaser! I brought these into class on the last day of school and they were gone in a flash! ince I like to make things easy, I used a boxed cake mix and store bought frosting but I did tweak these a little bit to add extra flavor. You will be seeing homemade cake and frosting recipes in the future! Enjoy!
Ingredients:
Directions:
Makes about 24 cupcakes.
- Chocolate Cake Mix (plus the ingredients on the back of the box needed to make the cake.)
- Vanilla frosting
- 1 package of Oreos
- Cupcake Liners
Directions:
- Mix the cake according to the instructions on the back of the box.
- In a food processor, chop up the Oreos until they are a fine, powder-like substance. Do this to the whole package of Oreos. (Alternate Method: place Oreos in a ziplock back and crush them) If you want to have a whole Oreo in the bottom of each cupcake, set aside approximately 24 cookies.
- If you choose to have an Oreo on the bottom of each cupcake, place one Oreo into the bottom of each cupcake liner. If not, pour about 1/2 of the crushed Oreo into the cupcake batter.
- Fill the liners 2/3 of the way and bake according to the directions on the back of the cake box.
- To make the frosting, dump the frosting out of the can into a mixing bowl. Pour the remaining crushed Oreo onto the frosting, then beat with a hand mixture until completely combined. (Using a hand mixer also make the frosting puffier and it doubles in size!)
- One the cupcakes have cooled, pipe or spread the frosting on. I used a 1M piping tip.
