During the school year, it is hard for me to find time to sit down and have a real breakfast every morning. I usually end up grabbing a protein bar and heading out the door. That habit is not very healthy and I end up hungry by 3rd period. With school starting, I decided to find a recipe for homemade breakfast treats that are healthier than my normal go-to and super easy to make. I ended up eating almost the whole batch of these in one day! That is when eating healthy isn't so healthy anymore. Oops! These bars make the perfect breakfast or a little power snack. You get protein from the peanut butter, omega-3 from the flax seed and yumminess from the chocolate chips and rice crispies. If you don't have flax seed, you can use oat flour, which is just oats, ground into a flour consistency. They are no-bake, minimal ingredients and one bowl. So easy! Make sure to store them in the fridge during the week. Makes 6-8 bars depending on the size of each bar. Enjoy!
- ½ cup peanut butter
- 2 tablespoons honey or agave nectar
- 1 tablespoon vanilla
- ¼ cup flaxseed
- ½ cup uncooked oats
- ½ cup rice crispies
- ¼ cup mini chocolate chips (optional)
Directions
- In a microwavable bowl, add the peanut butter, honey/agave and vanilla. Microwave for 20 seconds and then stir to combine.
- Once combined, add the flaxseed, oats and rice crispies. Make sure everything gets mixed up well! Then add in chocolate chips.
- Pour into a loaf pan or other mold and pack down tightly. Place in the fridge for 30 minutes or so and then cut into bars!
